"Non-Thermal Gliding Arc Plasma Treatment of N-Acetylcysteine: A Novel Thiol Oxidation Approach for Enhanced Food Preservation"

Accepted for publication in Plasma Medicine (Begell House), June 2026 — reference PMED-64905. The paper establishes the first peer-reviewed confirmation that gliding arc plasma directly oxidizes the NAC thiol group, forming stable S-nitrosothiol (RSNO) bonds with zero nitrite/nitrate accumulation. A mechanistically distinct pathway from all existing plasma-activated water technologies.
